Tokiwa Hotel
This long-established inn is known as “Kofu’s guest house.” In its Japanese-style dining area, guests will enjoy dishes made with Koshu beef and seasonal ingredients, carefully prepared one by one.

We offer wholesome dishes that make the most of the flavors of local seasonal vegetables, tofu, Koshu wine pork, and other ingredients.
Our menu is full of dishes that combine the umami flavors of vegetables, beans, and fermented foods, such as oven-baked marinated mushrooms, a okara salad with fish sauce and curry, grilled wine pork marinated in miso, and fried tofu grilled with salted koji.

Maiko Shindo
Fermentation researcher and chef. After working for a company, she lived for a year at a sub-temple of Daitokuji Temple in Kyoto. After studying culinary arts in France and working at a confectionery shop in Tokyo, she went independent. She handles a wide range of cuisine, including Japanese cuisine, French cuisine, bread, sweets, and fermented foods, and her easy-to-make and stylish recipes are always highly acclaimed. She is active in a wide range of fields, including cooking classes, recipe development, lectures, and TV and radio appearances.
